"The wine is dark in color with excellent aromas of dark fruit, black currant, cedar box, floral and mountain herbs. On the palate layers of plum, blackberries and currants with hints of summer savory, thyme and a touch of vanilla from the French Oak. The tannin structure and acidity add a lingering complexity and length to the wine. Showing well now and will hit its prime in 5-15 years."

Panza is the second label from Quixote Winery; it’s made from the organic fruit from the Estate, but unlike Quixote wines, it's available outside of the winery. Legendary winemaker Philippe Melka is the winemaker and his style works magic with the Stag's Leap District fruit. Restrained fruit, yet dark and dense with cedar box, underbrush, plums, mulberries, and notes of chocolate from the 100% French barrel aging. Fruity, spicy, soft, and bold.

On the front of the palate, blackberry and blueberry take the lead giving way to roasted meat on the finish. With the inclusion of Petite Sirah in their Grenache, Syrah, Mourvèdre blend, it becomes a charming light red bursting with spiced wild strawberry-like flavors that spritely dances on the palate. It's somewhat unfocused, with generic red fruit and plenty of barrel toast, which puts a charred edge on the tannins. Overall the fruit is far lighter and more delicate than the wood it's been aged in.

Medium intensity aromatics reminiscent of brambleberry, stewed cherries and sweet and spicy cured leather are followed up with subtle hints of herbs and lavender. Rogue Valley Pinots tend to be sturdy and straightforward, as this one demonstrates. Simple rhubarb and strawberry fruit flavors have been softened and broadened via 16 months in French oak, a third new. There's a spicy lift and a touch of heat in the finish, with suggestions of caramel from the barrel aging.

Delicate flavors and aromas of lemon grass, grapefruit, crisp green apple and orange blossom are delivered with a lively, refreshing acidity and texture. Notes of wet stone and minerality add an intriguing complexity.
Fruit was carefully handpicked in the cool of the morning, then gently whole cluster pressed. Juice was then split to about 60% stainless steel and 40% barrel fermentation. The stainless steel portion was slowly fermented, cold, with specialized yeast strains to exemplify the fruit and express more aromatics. The barrel fermented portion was split between used French oak and new Acacia to add texture and subtle spice to the blend. After a period of extended lies aging with bottonage, the wines were blended and allowed to merry prior to bottling under screwcap to lock in the delicate flavors and freshness of the wine.
